Ingredients: 30ml (1 fl oz) Nine Isles Peach & Lychee Gin; 15ml (½ fl oz) peach liqueur; Chilled champagne to top; 1–2 fresh mint leaves

A tropical twist on the classic Bellini — Peach & Lychee gin and peach liqueur lengthened with chilled champagne.

Ingredients

30ml (1 fl oz) Nine Isles Peach & Lychee Gin
15ml (½ fl oz) peach liqueur
Chilled champagne to top
1–2 fresh mint leaves

Method

Lightly break down the mint leaves in the base of an empty champagne flute.
Add the Nine Isles Peach & Lychee Gin and peach liqueur.
Stir gently to combine.
Top up with chilled champagne and serve immediately.
